Artisanal Mezcal
It is produced using artisanal methods that respect the knowledge passed down from generation to generation.
It is characterized by the use of techniques
traditional in cooking, grinding,
fermentation and distillation.
Field
This is where our journey begins: planting and giving our agaves the optimal conditions to achieve the maximum expression of quality and maturity, fundamental qualities and characteristics that give rise to our products.
Cooking:
The pineapples are slowly cooked with wood in conical stone ovens underground, where they acquire the characteristic smoky flavors.
Grinding
The cooked maguey is ground and shredded to extract the sweet juice, preserving the natural essence of the plant.
Fermentation
The sweet juice and fiber extracted rest in wooden vats where they go through the fermentation process, enhancing their aromas, at the same time the sugars are converted into alcohol naturally, without added chemicals.
Distillation:
Finally, in copper stills we separate and select the best components from our previous processes, resulting in a pure mezcal full of character, concentrating the best aromas and flavors.
Packing:
It is bottled under controlled conditions to keep its flavors and aromas intact, guaranteeing that each bottle retains its essence and artisanal tradition.
Ancestral Mezcal
It is made strictly following the most traditional and authentic techniques, which date back to the first mezcal production practices.
It stands out for its authenticity and its faithful adherence to ancient methods.
Field
This is where our journey begins: planting and giving our agaves the optimal conditions to achieve the maximum expression of quality and maturity, fundamental qualities and characteristics that give rise to our products.
Cooking:
The pineapples are slowly cooked in conical stone ovens, where they absorb heat and natural smoke, giving them their distinctive smoky flavor.
Grinding
The cooked agave is ground by hand using wooden mallets and canoe, a traditional process that preserves the integrity of the agave fibers and its unique flavors.
Fermentation
The maguey fragments and their sweet juices rest slowly, giving us during this rest complex microorganisms, as a reward, they give us much more enriched aromatic and sensory characteristics in our mezcal.
Distillation:
Our ancestral distillation process is characterized by using clay pots that rest in adobe stoves, providing us with soft textures and deep flavors with mineral notes, creating a mezcal with authentic character and rooted in tradition.
